About the Position

The Sous Chef position is full-time and reports to the Executive Chef. This vital position is responsible for execution of meals in all the kitchens and dining areas at Grey Oaks. Working in conjunction with the Executive Chef, the Sous Chef ensures a consistent and extremely high quality product - from fine dining to the ideal poolside hamburger. In addition, the Sous Chef plays a key role in teaching and training staff in preparing meals and leading a team during meal service periods

The Sous Chef exhibits culinary talents by personally performing tasks while assisting in leading the staff and managing all food related functions. Also assists in supervising all kitchen areas to ensure a consistent, high quality product is produced.

Considered one of the premier Country Clubs in Florida, Grey Oaks opened in 1993 and encompasses the Grey Oaks and Estuary communities, along with 54 holes of championship golf. About You

You are enthusiastic about providing supportive leadership to kitchen staff. You have a knowledge of a wide variety of cooking styles and methods, and take equal pride in producing a 14-course gourmet tasting menu as well as delivering a best-in-class hamburger. But just as important as your culinary skills is your ability to communicate, lead and develop a team of multi-generational and multi-cultural staff. Primary Responsibilities

  • Direct food preparation team
  • Assist in the design of menus
  • Produce high quality plates, including both design and taste
  • Supervises, leads, trains and develops kitchen staff.
  • Assist with menu planning, inventory, and management of supplies
  • Ensure exceptional and consistent quality of food
  • Responsible for cleanliness and safety in all kitchens; complies with food safety standards
  • Proactively make suggestions and create new ideas and concepts to improve the kitchen's performance and satisfaction of our Members
  • Schedule staff shifts.
  • Order food supplies.
  • Monitor and maintain kitchen equipment.

Education/Experience/Skills

  • BS degree in culinary science or related certificate preferred.
  • 5 years kitchen experience in high end private club, resort or restaurant.
  • Significant experience in culinary and banquet preparation and production.
  • Effective experience in leading culinary teams.
  • Proficient in various cooking methods, ingredients, equipment and procedures.
  • Ability to effectively train and lead a team.
  • Working knowledge of various computer programs (restaurant management software, point-of-sale etc.)
